Happy day off! Raw corn salsa?

Happy Labor Day!  Hope you all enjoyed the holiday, maybe some of you had it off?  What did you do today?
We got back from our civil war event on the northern Oregon coast, which I talked about here, and then had a little backyard grill session and salsa party, enjoying the lovely weather and family and friends.
Many types of (all homemade) salsas and dips... fresh pico de gallo, fresh guacamole, spicy salsa, and raw corn salsa/salad...
Grilled some fresh wild-caught salmon:
We cut up a watermelon for dessert (they are in season here in Oregon, so they are so cheap at the store right now!):
My dad took a break in the hammock before dinner:
And my fiance, Jason, played some guitar for us...
Do let me tell you about this amazing raw corn salsa we had... totally fresh and delicious, great as a side dish/salad or with chips!  Jason's mom makes it (it's always a huge hit!) and I saw a recipe in one of my fave cookbooks, also.
Here's what you need:

  • Fresh corn (I buy it off the truck at the farmer's market!)
  • Avocado
  • Red pepper (optional)
  • A little red onion
  • Cilantro
  • Fresh lime juice
  • Sea salt
You can figure out the amounts based on what you like. =)  I'm sure there are other great variations on this type, too!  Have any of you ever had raw corn salsa?  What's your recipe?

  2. i always try and leave a comment and it takes a few tries. heres try number three:

    i make this same recipe and add a tomato & a can of thoroughly rinsed black beans for some protein! i also may or may not go overboard with the cilantro. yummmmm! :)

  4. Oh my goodness, that sounds so yummy! And we have a ton of corn in our garden that needs to be eaten, so this is perfect.
