Homemade almond butter chocolates--way better than Reese's Peanut Butter Cups!
The back story is, I've seen candy and truffle recipes before and always been intimidated. This is the first time I've ever used a candy mold, it's exhilarating! I got these two candy/soap molds c/o WholePort and they sat on the dining room table for a while, overwhelming me. ;) Then I dove in.
Homemade Almond Butter Cups Recipe
I've made chocolate before, like in my whole food, gluten- and dairy free chocolate mousse recipe (with 1/2 cup cocoa powder,1/2 cup coconut oil, and 1/2 tsp vanilla), but for these I decided to go super easy. I used dark chocolate chips and melted them since I knew the texture would be right and they would harden up enough once they cooled. So here's the recipe:
- 2 cups dark chocolate or high quality chocolate chips (like these Enjoy Life ones)
- 1 cup homemade almond butter (or grind it yourself at the store by the pound! Or get some with nothing but a little salt added), refrigerated
Super simple.
Instructions:
Melt the chocolate in a pan on low or on a double boiler. Fill each cup halfway with melted chocolate. (I used a mini ice cream scoop/melon baller thing to make them all even.)
Dollop little chunks of almond butter (ideally still pretty cold from the fridge) into the centers of the chocolate. Refrigerate.
Then they look like this. Now put an extra, smaller scoop of the melted chocolate (you may have to warm it again) on top. Then refrigrate.
That's it!
I still haven't used the orange oval candy mold from WholePort. That shape reminded me of raspberry truffles and those wont' be in season for a while, so I'll have to think of something else! Anyone else ever made your own chocolates at home?! Any tasty, simple recipes I should check out:?
