Strawberry + pumpkin pie smoothie recipe (Paleo, dairy-free, with protein!)

It's that funny time of year when everyone is so anxious for fall but it was 86 degrees the other day!

Did you know that you can still find the late harvest varieties of fresh Oregon strawberries at your farmer's market or New Seasons?? The Oregon Srawberry Commission asked me to come up with a recipe for late season berries and I thought, you know what I've never seen before?? A healthy strawberry/pumpkin treat!

I make SO many of my slushy all real food protein smoothies these days (breastfeeding mama, need healthy snacks!), I was definitely up for experimenting to get this flavor combo right.

Strawberry + pumpkin pie smoothie recipe


Ingredients:

  • 1 c. unsweetened almond milk or coconut milk
  • 1 serving unflavored collagen protein
  • 1/4 c. canned pumpkin
  • 1/2 tsp. pumpkin pie spice (I have a great recipe here!)
  • 1 c. frozen Oregon strawberries
  • 1 frozen banana
  • 4-5 ice cubes
  • (optional--if you like it sweeter) 1 tbsp. xylitol
  • (optional--not pictured) handful of fresh spinach for extra veggies and no change to flavor!

    Instructions:


    1. Combine all ingredients in a high speed blender till smooth.

    That's it! You'll know it's done when it has this 4-piece swirly shape and all of the strawberry pieces are chopped up. Serve immediately!

    I eat mine with a spoon since it's thick like a milkshake!

    The flavor of this smoothie is complex, with the delicious strawberry flavor plus the classic pumpkin pie spice edge! And you can add more pumpkin pie spice and/or more pumpkin if you want a stronger flavor! Jason is a big pumpkin pie fan and he thought it needed more. I thought the spices were just spicy enough!
